OpenEVSE boards are shipped with the RGB LCD set as the default. To change to Monochrome:

Press and hold button to enter the Menu
Quickly press the button to run through the options
Select (Press and hold) LCD Type or Setup (then LCD type on newer firmware)
Quickly press the button to run through the options
Select (Press and hold) "Monochrome"
Exit Menu
